Not too sweet but just right these fluffy coconut cocoa pancakes are a protein punch with flavour. Perfect for the kids on a Sunday morning but make sure you get some for yourself.
Mix together the banana, Happy Chicken Egg and egg whites, protein powder, coconut flour, cocoa powder and water in a blender until smooth. Add more water if the mixture is a little thick.
In a non-stick frying pan over medium heat, add the desiccated coconut and toast till golden. Save half to garnish, stir the rest into the pancake batter
In the same fry-pan, melt the coconut oil and ladle large spoonfuls of the batter for 1 minute, flipping then cooking the other side for another 30 seconds. Use up all the batter and stack the pancakes once cooked.
When ready to eat, drizzle of the yoghurt and sprinkle the toasted coconut and some cocoa powder. Eat up!
