Method
While preheating the grill to its highest setting, in a medium sized non- stick fry pan heat the oil over a medium heat. Add the spring onions and fry until softened
Add the spinach a handful at a time until its wilted, and then tip out onto a plate lined with paper towel. The lay another plate on top and turn them sideways and squeeze out all the moisture.
Return the spinach and spring onion mix to the pan and mix in the potatoes. Pour over the Happy Chicken Eggs and Egg whites, season with a little nutmeg, salt and pepper.
Gently shake the pan as the eggs start to set, pulling the eggs into the middle. Crumble the feta over the top and slide the pan under the hot grill and cook for around 3 minutes until the top is golden brown and the eggs are set
Ready to serve, slide onto a serving board, cut into wedges and eat up!
