Ingredients

  • 2 cups self-raising flour
  • 1 tsp bicarbonate of soda
  • 2 brown overripe bananas, mashed
  • 2 yellow bananas, cut lengthways
  • 2 large Happy Chicken Eggs
  • 1 cup of milk (either light or full cream)
  • 1 cup of whole walnuts
  • 1 cup of dates, pitted and chopped
  • 1 cup desiccated coconut
  • 1 cup untoasted oats
  • 1/4 cup brown sugar
  • 2 tsp honey
  • A pinch of cinnamon

Method

Preheat oven to 160Β°C.

Fold all the ingredients together.

Top with a sprinkle of brown sugar.

Place cut bananas on top (pushing partway into the mixture) for visual appeal.

Use loaf tins lined with baking paper.

Put in the oven for approximately 40 minutes.

Use a skewer to test if loaves are ready.

Cool on wire rack.

Cut into slices. You can serve it as is or with a little butter. If presentation is important, top with ricotta, fresh blueberries, and a drizzle of maple syrup.

Notes and tips...
> If you do not want to use milk, water is a substitute.
> If you find the mixture is too thick, you can add 1/4 cup additional water.
> If you want to add richness to the mixture, add melted butter (quantity optional).
> Using two loaf tins rather than one for this quantity ensures loaves are well cooked (not left gooey in the middle).
> You can use additional mashed bananas in the mixture, but be aware that the banana will tend to dominate the taste.
> It is suitable for freezing and will last about three to four days.
