  • 150ml eggwhites (approx. 4 Happy Chicken Eggs)
  • 1 cup caster sugar
  • 3 tsp cornflour
  • 1 tsp white vinegar
  • Whipped cream and fresh fruit to garnish


While preheating the oven to 150Β°C mix together with an electric mixer the eggs and beat until soft peaks form. Gradually add in the sugar and continue beating until the mixture is glossy.

Add in the vinegar, sift the cornflour over and fold through until mixed together with no clumps

Line the baking tray with non-stick baking paper and pile on the mixture into roughly a 20cm circle. Place in the oven, reducing the heat the 120Β°C to cook for 1 hour.

Turn the oven off and allow the meringue to cool in the oven before serving. When ready, top with whipped cream and seasonal fresh fruit. Your friends will all be egg-static with your creation.
